Low sodium cooking including family favourites. I have tried to include interesting little bits of the history of recipes or whose favourite it is. The book contains recipes from basic daily meals to a few gourmet ones.

Beef Stew

Serves 4
Preheat oven to 200 degrees

Ingredients

1 lb. stew beef
4 medium potatoes peeled and quartered
3 large carrots peeled and sliced
3 ribs celery sliced into 1” pieces
1 onion peeled and sliced
1 can tomato soup (I use Heinz tm)
2 tsp Italian seasoning (or whichever ones you like)

Flour, gravy browner and water

Combine all ingredients in a roast pan. Cook in oven for approx. 4.5 to 4 hours. Make a slurry out of flour gravy browner and water. Mix in with stew and place back in oven for another 15 minutes until gravy is thickened.

You could probably do this in a crock pot.

I do hope this helps some fellow sufferers and, also, others to understand a little of what it is like to live with this disease. Facing death makes you appreciate every minute you have. Today my days revolve around medications and the effects of them but no matter how much discomfort or pain there is I am grateful every day for being here to enjoy spending time with the ones I love. The best thing you can do is just keep on smiling and live your life to the fullest possible.

One thing that also changes is your diet. Low sodium it is and from that came this book.
