The event is the English Village International Art Show, where international guests arrive to attend several days of activities. Josie’s friend Sharon has promised to help with refreshments for the Art Show reception. As one of the delectable finger foods, Sharon offers to bake miniature lemon tarts.
In real life, the Mini Lemon Tarts are one of Author Anna St. John’s favorites, from a collection of her mother’s recipes.
MINI LEMON TARTS
(Requires 2 tart pans. Makes 24 tarts)
Lemon Tart Pastry Shells:
1 cup flour
1/3 oz Cream Cheese, softened
1 stick butter, softened
Preheat oven to 350 degrees.
Combine ingredients. Divide into 24 equal parts. Roll into balls and press into pan.
Bake at 350 degrees for 20 minutes. Cool. Fill with lemon curd.
Lemon Curd Filling:
3 eggs
1 cup sugar
2 lemons, juice and rind (6 tbsp)
½ stick butter
Beat eggs slightly and cook with other ingredients in top of double boiler until mixture thickens. Refrigerate lemon curd until chilled.
Spoon into pre-baked pastry shells.
Serve.
